I made this a few nights ago, and boy was it delicious! It was probably the best thing I cooked all week, really, it was that good.  I’ve been looking for ways to keep food interesting and tasty instead of just chicken/fish/rice/broccoli….blah I’d last about half a day if that’s how I had to eat…boring!  I love the flavour combinations of Asian food, this will definitely be on the menu more!

 Asian Meatloaf

 

  • 1kg pork mince
  • 1 cup of kale
  • 1 carrot, grated
  • 1 zucchini, grated
  • ¼ cup of coconut aminos (soy sauce alternative)
  • ¼ cup of fish sauce
  • 2 tablespoons of lime juice
  • ¼ cup of sesame seeds

How to make:

  1. Pre-heat the oven to 180 degrees Celsius.
  2. Mix all the ingredients in a large mixing bowl.
  3. Line a large loaf tin with baking paper.
  4. Press the meat mixture into the loaf tin and place in the oven for 40 minutes, or until cooked.

 

We served ours with coconut cauliflower mash (1/2 head of cauliflower and ¼ cup of coconut milk).
