Yesterday I made these fritters, they were so simple and so yummy. My Nan makes awesome non-Paleo corn fritters, as a kid we would eat these smothered in tomato sauce (ketchup for my US friends).

Chicken and Zucchini Fritters
1 medium zucchini, grated or chopped in the food processor
150g cooked and shredded chicken
2 eggs
How to:
Extract the juice from the grated zucchini, give it a really good squeeze.

Add all ingredients into a bowl and add any herbs and spices you wish, I used basil. Heat a fry pan (one that has a lid) with some ghee. Shape a fritter with your hands and place it into to the pan, flattening out slightly.

Place the lid on the frying pan and let the fritters cook for about 5 minutes, then flip and cook the other side. Serve with a tomato salsa….enjoy 🙂
