Tonight’s post is all about the amazing sauce I cooked up today. I use to buy it from Woolworths (a year or so ago) and when I started eating Paleo I missed this tangy sauce on my chicken so I tried a few different ways of making it and came up with this recipe.

Spicy Thai Tomato and Lime Sauce

Ingredients
  • ½ cup tomato paste
  • 4 diced tomatoes
  • ¼ cup apple cider vinegar
  • 2 diced apples
  • 2 cloves of garlic, finely chopped
  • 1 teaspoon of sliced fresh ginger
  • ¼ teaspoon salt
  • ¼ teaspoon each of chilli powder and dried coriander
  • 2 kaffir lime leaves, thinly sliced
Instructions
  1. Put it all in a saucepan and simmer until reduced and slightly thick.
  2. This sauce is great with any meat at all.
