Lemon Basil Chicken (serves 6)

1kg chicken breast, sliced

Zest of 2 lemons and juice of 1

3 cloves garlic, minced

3 teaspoons fresh cracked black pepper

3 shallots, sliced

1 cup chicken broth

3 handfuls of green beans

Big handful of fresh basil leaves, chopped

How to:

Heat a large wok and add the garlic, lemon zest, black pepper and chicken.  Fry until chicken is cooked.  Add the shallots, lemon juice, chicken broth and basil leaves.  Simmer for 5 minutes then add green beans, simmer for a further 10 minutes.  Serve with cauliflower rice or mash.
