Holidays! I love Christmas holidays…it’s the time of the year when I get to catch up with family and friends and really fully relax.  It’s also the end of teaching for me, for the next year or two or forever, I’ll take time to focus on my family, my/our health, my fitness, working my way through my Nutritional Medicine Degree and advocating for Destiny Rescue.

It also means, back to regular blogging and life in general.  Life gets really busy doesn’t it? Like crazy busy and you have no time to do anything for yourself and before you know it your exhausted and burnt out.  Yep, I know you know what I’m talking about.  I’m now finding balance and really enjoying it.

Anyway…let’s get on with it shall we.  The recipe today is for an Ossobuco I made for our fifth wedding anniversary a few weeks ago. It’s simple, easy and so tasty. I love food that only has a few ingredients and doesn’t take too much time in the kitchen.  This is one of those special dinners that tick all of those boxes.

Ossobuco

  • 4 Ossobuco steaks
  • 1 can of diced tomatoes
  • 1 tablespoon of olive oil
  • 1 teaspoon of Italian Herb mix (marjoram, rosemary, thyme, sage, oregano, basil)
  1.  Pre-heat the oven to 180 degrees Celsius.
  2. Heat the olive oil in a large pan and sear the steaks.
  3. Place steaks into a large casserole dish and cover them with the tomatoes and herbs.
  4. Place the lid on the dish and place in the oven for 2-3 hours (I do ours for a little longer at times, up to 4-5 hours).
