Pad Thai is one of my all-time favourite dishes…I just love it.  You could add Kelp or Sweet Potato noodles to this dish, but it’s honestly perfect without it.  My 15 year old son cooks this for dinner when it’s his turn to cook, it’s that easy to make.

Paleo Chicken Pad Thai

Ingredients
  • 4 chicken breast, sliced finely
  • 4 tablespoons coconut oil
  • 4 cloves garlic
  • 3 tablespoons fish sauce
  • 1 tablespoon coconut aminos
  • 4 tablespoons lime juice
  • ½ tablespoon apple cider vinegar
  • 4 shallots, thinly sliced
  • 1 packet (or do your own) of julienne carrots, broccoli and beetroot
Instructions
  1. Heat oil in a wok and add the garlic, fry.
  2. Place the chicken strips into the wok and stir fry for about 3-5 minutes, until cooked through.
  3. Add the fish sauce, coconut aminos, lime juice, and apple cider vinegar.
  4. Stir this through for about 2 minutes then add the shallots and julienne vegetables.
  5. Stir fry for a further 2-3 minutes.
  6. Serve topped with almond slivers.
  7. Enjoy!
