I’ve pretty much had a liquid diet since Monday, good news is…I’m feeling much better today!  I made this batch of soup for lunch yesterday…reheated well today for lunch too!  The weather is getting cooler here and warm soups are awesome, especially when topped with crispy bacon!

Paleo Leek and Asparagus Soup (serves 4)

2 leeks, washed and sliced thinly (don’t include the tough green ends)

3 bunches of asparagus, chopped

1 large sweet potato, peeled and diced

3 litres of chicken stock

How to:

Place all the ingredients into a large soup pot and simmer for 30-40 minutes, or until vegetables are very tender.  Let the soup cool slightly and blend until smooth.
