I haven’t posted or blogged my daily food for a while, partly because the food has been boring and ‘just food’ with an occasional new recipe feature. I’m back on track with my training and absolutely feeling sore.  I did a weights workout this morning and I’ll head out for a run soon.  I have an online PT, I worked with her a few years ago and just love how she whipped me into shape and had me running my first half marathon.  I got my first 4 weeks’ worth of workouts yesterday ….oh boy!!! 6 days a week of endurance, weights, plyos, and speed training.  Look out muscles you are about to get sore!

Anyway, I realised I haven’t posted this absolutely amazing Massaman Curry yet (I put it on Instagram).  Honestly, it is sooooo good! Here it is, enjoy 🙂

Paleo Massaman Chicken Curry

2 cloves of garlic

1 sliced green onion

1 lemon grass stalk

1 teaspoon dried chilli

½ teaspoon coriander seed

¼ teaspoon fish sauce

Pinch of cumin, nutmeg, cardamom and cinnamon

2 tablespoons coconut oil

3 large chicken breasts, diced

1 large sweet potato, diced

1 can of coconut milk

Roughly chopped cashew nuts

How to:

Ground all the spices together with your mortar and pestle.  Heat coconut oil in a large fry pan, add the spices and fry until fragrant.  Add the chicken breasts and cook, about 5-8 minutes.  Add the diced sweet potato and coconut milk; simmer on low heat until the sweet potatoes are soft.  Top with roughly chopped cashew nuts.
