Paleo Orange Chicken

4 chicken breast or thigh, sliced thinly

3 tablespoons ghee (or coconut oil)

Juice of 2 large oranges

1 drop of Young Living orange oil (or zest of 1 orange)

1 teaspoon grated ginger

3 tablespoons coconut aminos (soy sauce substitute)

1 teaspoon minced garlic

1 teaspoon chilli (or to taste)

How to:

Start by making the sauce.  Add the orange juice, orange oil (or zest), ginger, coconut aminos, chilli, and garlic to a small saucepan and simmer. Let the sauce simmer for 15-20 minutes.

In a hot wok heat the ghee (or coconut oil) and fry the chicken.  Pour the sauce into the wok and stir through.

Let it simmer on low heat for 10 minutes to let the chicken absorb the orange sauce.

I serve this with cauliflower mash (or cauliflower, zucchini mash) and sliced shallots.

Cauliflower Mash

Pretty simple really:

Cut one cauliflower head into pieces and steam, or boil, until tender.  Drain and add some ghee, salt and pepper.  I use the stick hand-held blender, because it’s easy and I can get it nice and creamy.

This chicken dish is so easy to make, otherwise I probably wouldn’t make it 🙂 and it’s really tasty.  Sometimes I just leave the chicken breasts whole and place the sauce over them when their cooked, it just depends on how I’m feeling.  The kids really like this dish too, like all of my dishes they have been tried and critiqued by teenagers and toddlers.
