My Dad and Stepmum arrived today (they live about 5 hours away), they are here for a grandkids fix for a week. I figured I’d lash out (I don’t make treats all that often) and make some muffins (probably more for the kids than for anyone else). I have absolutely resisted them, which is a BIG tick for me. I don’t normally cook things that have more than 5 or so ingredients and that aren’t ‘easy’ but every now and then I make an exception. This one is pretty easy however. (I tell the kids and non-paleo family members (like my sisters etc) that these are apple berry muffins…so shhhh)

Paleo Zucchini and Berry Muffins

  • 1 cup almond meal
  • ½ cup coconut flour
  • ½ cup tapioca flour
  • 2 teaspoons baking powder
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1 cup dates, soaked in hot water for 30 minutes
  • 3 ripe bananas
  • 3 eggs
  • 1 tablespoon apple cider vinegar
  • ¼ cup coconut oil
  • ¼ cup mixed berries
  • 1 medium zucchini, grated

How To:

Combine all the dry ingredients and mix. In a food processor, combine dates, bananas, eggs, vinegar and oil. Mix until there are no lumps. Pour banana/date mixture into the dry ingredients and stir. Fold in the berries and zucchini. Spoon the mixture into prepared muffin or patty tins. Bake on a moderate heat for 15-20 minutes, or until the tops are nicely browned. This makes 36 small patty cakes, or 10 muffins.

This is super yummy with coconut butter on top or served with cold coconut cream, if there are any left on Friday I may have one (yay it’s meal off day)

Macronutrient break down for small patty cakes (without coconut cream or butter): 65 Calories, 3g Fat, 9g Carbohydrate, 2g Protein. For muffins: 236 Calories, 10g Fat, 32g Carbohydrate, 7g Protein.
