Today is D’s birthday, he is now 15! Oh my gosh…where on earth has the time gone?? He is such an amazing young man, with a kind and generous heart.  I am very excited for his future, but right now today and I am very thankful to God for giving him to me to raise and care for.

When I was in Thailand I had such amazing food, I REALLY love Thai food! I had a rice dish with pineapple and cashew nuts one night in Chiang Mai, it was really good (and cost 25 baht =$0.90 Au).

 Pineapple Cashew Nut Rice (3)

I made this for lunch today, because I was reminiscing and I stumbled across the photo.  I added chicken just to make it a complete meal, and boy was it good!  This recipe is one serve, or 2 small serves.

 Pineapple Cashew Nut Rice

  • 1 cup of cauliflower rice
  • 1 chicken thigh, skinless and sliced
  • ½ cup pineapple, sliced
  • ½ red capsicum, sliced
  • ¼ cup cashew nuts, (toasted optional)
  • 2 Tablespoons coconut aminos
  • 2 Tablespoons coconut oil
  • 1 Tablespoon fish sauce
  1. Heat the oil in a medium-large pan.
  2. Add the chicken and cook.
  3. Add the remaining ingredients and stir fry until well combined and slightly tender.

That’s it, nice and easy Thai food in a flash.
