This fresh, tasty, satisfying quinoa salad is my new favourite lunch. It teams up perfectly with fish or chicken and is so easy to make.
I prepared a large bowl of quinoa in my meal prepping so it cuts down on time durning the week.
There’s no ‘recipe’ for it, rather just a list of ingredients. Use as much or as little as you’d like.
- Cooked quinoa (or rice),
- Sliced salad veggies such as: spinach, radish, fennel, capsicum, cucumber, avocado
- Dried cranberries,
- Pumpkin seeds
- Dressing made of: lemon juice, a dollop of honey and chilli flakes
- Cooked chicken or fish
