I have struck gold….quinoa gold!

This fresh, tasty, satisfying quinoa salad is my new favourite lunch. It teams up perfectly with fish or chicken and is so easy to make. 

I prepared a large bowl of quinoa in my meal prepping so it cuts down on time durning the week. 

There’s no ‘recipe’ for it, rather just a list of ingredients. Use as much or as little as you’d like. 

  • Cooked quinoa (or rice),
  • Sliced salad veggies such as: spinach, radish, fennel, capsicum, cucumber, avocado 
  • Dried cranberries,
  • Pumpkin seeds
  • Dressing made of: lemon juice, a dollop of honey and chilli flakes 
  • Cooked chicken or fish
