Slow Cooked Cinnamon Beef Casserole

1kg diced beef

About ½ cup of tapioca flour (for dusting the diced beef with)

1 large carrot, sliced

1 large sweet potato, sliced

1 stalk of celery, sliced

1 onion, sliced

2 cloves of minced garlic

3 tablespoons tomato paste

1 cup beef broth

2 tablespoons balsamic vinegar

3 cups water

3 bay leaves

½ teaspoon each of dried rosemary, thyme and sage

2 cinnamon sticks (or 1 ½ teaspoons cinnamon)

How to:

Dust the beef with the tapioca flour (this will help to thicken the casserole while cooking) and place in the slow cooker.  Add all other ingredients to the slow cooker and stir, place the lid on and cook on medium heat for 2-3 hours.  Reduce the heat to low and cook for a further 4-5 hours.
