Mexican Meatballs

500g pork/beef/turkey/chicken mince (your choice)

1 teaspoon of Mexican spice mix (chilli, cumin, paprika, oregano, garlic)

½ a finely diced capsicum

1 finely diced onion

10 cherry tomatoes

How to:

Combine the all the ingredients, except cherry tomatoes, and mix in well using your hands.  Take a golf ball size of mince and flatten out slightly, place a cherry tomato in the centre and wrap the mince around it, rolling it into a ball.  Bake in a moderate oven for 20 minutes.  Bake in a moderate oven for 20 minutes, keep checking them because you don’t want them to be soggy, you want them with some firmness still.
