Paleo Orange Almond Ambrosia Cake

6 eggs, separated

1 mashed banana (or 1/3 cup of honey or sweetener of your choice)

Zest of 2 oranges

2 cups of almond flour

¼ cup coconut flour

½ cup orange juice

3 teaspoons of sweet spices mix (coriander, cassia, cinnamon, nutmeg, allspice, ginger, poppy seeds, cloves, cardamom)

How to:

Preheat the oven to a moderate heat.  Prepare a spring form tin with baking paper.  With an electric mixer, cream the egg yolks with the mashed banana (or honey). Add the zest and fold in the flours and spice.  Mix in the orange juice.  Beat the egg whites until soft peaks form, fold into the cake mixture.  Pour into the prepared pan and bake for 40 minutes or until a tooth inserted comes out clean.

This is a dense cake and I made an orange juice reduction to go over the top: ½ cup orange juice with pips placed in a saucepan and simmered on low heat until it thickens and reduces.
