So I made these Cauliflower Disks things. I don’t really know what to call them, but I know what I mean. It’s not a bread replacement, it’s not like bread at all, I just use it as a base and a way of getting more vegetables into our life.

Start with ricing the cauliflower: place ½ head of cauliflower in the food processor.

Pulse until the cauliflower resembles rice, about 5 pulses.

If your wanting Cauliflower Rice then you stop here and just slightly steam it, or add it to your dish.

If going on for Caulifloewer Flatbread then tip the cauliflower rice into a bowl. Whisk 2 eggs

Add the egg to the cauliflower rice with salt and pepper.

Line a baking tray with baking paper, spoon onto the tray and spread it out so it’s all the same thickness.

I also spread some into a large rectangular pan, just to have something different (to wrap around foods or to layer between foods).

Cook in a moderate oven for about 10-15 minutes.

We had a weird combination of food tonight. I made these cauliflower flat breads (not really a bread replacement but I don’t know what else to call them) and I put some baby spinach on top of that, then a hamburger patty, some of my fermented garlic beetroot, pineapple and an egg. The look on the kids’ faces when they saw it was priceless, but they loved it!

Put it all on the fork and it tasted sooooooo good!
