These muffins are the easiest muffins to make….ever.  This recipe is the basis for all muffins that I make, I just change the flavours around (a bit like my easy as paleo cookies).  You can add things like mixed berries, diced apple and cinnamon, cacao and choc chips…choice is yours.

 

Paleo Muffins

Serves: 6 large muffins
Ingredients
  • 2 1/4 cups almond (or any nut/seed) meal
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup coconut oil, melted
  • 1/2 cup apple berry (or any flavour combo) baby puree
  • 2 eggs
  • ***add-ons*** 1/2 cup mixed berries, 1/2 cup diced apple and 1 teaspoon cinnamon, 1 Tablespoon Cacao, the list is endless…
Instructions
  1. In a large bowl combine all dry ingredients and mix.
  2. Make a well in the centre of the dry ingredients and add the wet ingredients, mix well.
  3. Fold in any add-ons such as mixed berries, diced apple, choc chips etc.
  4. Spoon the mixture into muffin cases and bake in a moderate oven for 20 minutes. Keep an eye on the muffins as they may brown quickly.

  Drizzle with coconut butter, melted chocolate etc.
